HILLSBORO, Ore. — After years of anticipation, Filipino fast-food giant Jollibee will officially open its first Oregon restaurant on Friday, May 30. The new location will welcome customers at 1951 N.W. 185th Ave. in Hillsboro’s Tanasbourne Village, the company confirmed to the News-Times.
Founded in 1978 in the Philippines, Jollibee has gained international fame for its unique and flavorful menu. Its signature item, the golden-fried Chickenjoy, is often served with steamed rice and rich gravy. Earlier this year, USA Today named it the best fast-food fried chicken in the United States.
While the new restaurant will feature crispy chicken sandwiches and burgers, it will also offer traditional Filipino comfort food not commonly found in most drive-thru chains. Dishes such as sweet-style spaghetti with sliced hot dogs and palabok — a savory noodle dish topped with garlic sauce, ground pork, and hard-boiled egg — showcase the brand’s distinctive offerings.
The Hillsboro location has been in the works since 2022, when Jollibee announced plans to move into the former Chevys Fresh Mex building. With more than 100 branches across North America and over 1,500 worldwide, this expansion marks another step in the brand’s continued U.S. growth.
Jollibee Hillsboro will be open daily from 9 a.m. to 11 p.m., offering dine-in, takeout, and drive-thru service. Online ordering will be available in the coming weeks.
The company also plans to announce special opening-weekend promotions, including giveaways for the first customers through the door.
